I've read a lot of the threads regarding WM5 and it loooks great but all the talk of porblems and turning cells into paperweights has me afraid to make the jump.
Is WM5 near completion of development???

When will the development be finished? Probably never, hehe. I mean, it's being constantly tweaked... maybe once when a ROM will be out that is stable and fast enough. Actually, the Wizard2BA v2a ROM is pretty close to that.

And how many here has made their phones into paperweights with the "official" XDA Developers ROM's? I can't remember that I have read about that. Many people fear it, but I don't think anybody has actually done it.

The only way to make your device into a paperweight is to put it on the top of papers :) Okay, to be a bit more serious, you can make your device into a paperweight technically if something goes wrong when you are upgrading the bootloader. If you are just upgrading the ROM/Extended ROM/Radio, the worst thing that can happen is that you'll have to do it again. Once I accidentally disconnected the cradle from the computer when i was upgrading the ROM...I just went into bootloader, and started the upgrade process again. As long as the bootloader is unharmed, you can't really turn your device into a paperweight.
