Can somebody tell me which is the latest/stable DUTCH WM6 version (I know use a wm2005 qtek rom on my MDA Vario)?

There's no dutch WM6 (yet) but you can install one of the many WM6 roms.
For the dutch operator settings, download and install the NLRetailWM50.cab that you can find in this post http://forum.xda-developers.com/showpost.php?p=1182567&postcount=14
