Interesting - you've started a poll without actually including the poll! That's the sort of thing I'd do!!
My vote is currently going to vp3G's ROM, with Slueth255 a very close second. The only reason for that way round is vp3G's applications are closer to my "normal" set than Slueth's - that's it!
P.S. I'm sure you're going to get flamed to death as this question has been asked SO many times before. Still thought it was worth answering though as ROMs change so quickly so my answer does too.

I flashed my new 8525 to VP's rom on friday night and haven't had any real problems yet.
I love it, works nice and fast.

Ok, wuck-fits
This poll has been altered.
Now we want everyone to vote which is the 'Best WM6 Rom Poll' poll.
I think my favorite one was the one where Austin deliberately left out Black because JJ didn't answer his PM.

And that never made sense to me either.
We all here at xda-developers know the 'dramas' behind some of the past friction between some of you talented cooks. We saw the heat from misunderstandings; whether it was regarding donations, or taking work - only releasing or supporting Roms to another site. What's the big deal? I thought this was a hobby. I don't want to start listing names of all the talent who contribute (which would obviously include you, JJ, and Austin) but all, including the cooks benefit. So if someone wanted to move to another forum to self moderate, why would we not want to make all choices we are aware of available for vote.
(poll: what's your favorite color? here's your choices - blue or red)

So, back to topic.
I think 'Best' is relative and subjective.
What's best for one person may not be for another.
I lean toward the 'Lite' or 'Stripped'
another may lean toward 'carrier optimized'
Try it, if it works, it's the 'Best' for you.
One hint however, not a rule; if a cook cooks in carrier bloat, the same carrier as you and he uses, and you like the bloat, it's very likely their carrier specific Roms will be the best for you.

How does one go about cooking their own ROM? I'd love to start tweaking this phone out.

vp3G's 3.62.3. I've occasionally loaded new ones as they are released but it all goes back to vp3G for my personal preferences of stability of the apps included, available RAM (before I install my own apps), and overall "look & feel" of his ROMs.
However, I am looking forward to the upcoming release of Schaps ROM with WM 6.1. I think his roms are top notch as well.
