Start Menu/Button Color and Behavior?

When the start button is clicked, a white gradient applies over left side of the nav bar. At the same time, the text changes color. I was wondering if anybody knows how to change this. I believe the registry may be in GWE, or possibly under theme.

Also, does anybody know how to disable the task title that replaces the Start text when a task/app is opened?

I wonder if this can be changed within the registry....I know that one can hide the start icon with code:
