I was able to do this on the 6700, through Start Menu/Settings/Phone/Services/. However I can't figure out how on the xv6800. Any help in the right direction would be great. Also if there is a way to disable vm notifications in general I would be happy. I could live without it.
Thanks in advance!

On my PPC-6800, it's in the same place as the 6700 was. Did you scroll through the services? They're not in alphabetical order.

Man that sucks! The "Voicemail" option doesn't exist on the XV6800. Is it available on the Sprint Mogul? I'm going to try to do a regedit (http://pdaphonehome.com/forums/ppc-6700-xv6700/65559-6700-voicemail-notification-bug-only-says-i-have-1-voicemail-when-i-have-many-2.html) that I found on pdaphonehome. Thanks again JimSmith94. :)
