Is it possible to run dual Ultimate Launchers on the today screen?

Why do you wanna do that? if you elaborate, you might get some ideas here, many people use UL.

I would say no it is not possible (at the moment).
But you can contact the developer for suggestions. :)

What I was thinking... if you had 2 ultimate launchers stacked on top of one another, each one could spin individually. This would allow for more options on the today screen.
