change default SIP?

Hi All,
Am using the excellent PocketCM keyboard, and I want it as the default for everything - however, on each reboot the phone defaults back to the standard MS one.
Is this changeable?

Nice one. I always find it very irrertating when I see the default keyboard back. I think almost everyone uses PocketCM these days.
