Start with http://forum.xda-developers.com/showthread.php?t=408786 this has all the tools and is very easy to use and also very a fast rom,

Start practicing by adding/removing items in the oem folder (to remove cut from "oem" and paste to "removed from original" folder) this is how i built my first rom, been on my phone about a month now and not has to hard reset (Must be good) then when you get a bit more confident you can look at going to http://forum.xda-developers.com/showthread.php?t=310076 this is, in my opinion a very complex kitchen but it will strip a rom into useable parts for use in the first link,

If you want to add your own Programs that you can't find as "packages" folders to go into the oem folder see http://forum.xda-developers.com/showthread.php?t=388883 this builds packages from .CAB files

Have a go i found it easy to use
