Hey dude, don't take this the wrong way. But it sounds like for the meantime you may be better off to stick with official ROM's from your carrier. Upgrading to these custom ROM's really requires someone who has experience and has a better idea of what they want to accomplish.
If you really want to upgrade to one of these, you have a LOT of reading to do to familiarize yourself with the procedures. At worst, you could actually brick your phone (or in other words, render it unusable) if you do something you shouldn't. Although many will try to help you in that case, if it's unrecoverable, nobody here will accept responsibility for that.
If you are unsure, I'd recommend sticking to the official releases for your carrier.
My two cents.

ROM: DCD 3.2.6 with Bell Carrier cab
RADIO: 3.42.40
Install those two, here's what you get:
Slimmed down OS (a bunch of stuff removed in order to free up more RAM)
GPS enabled (you will be able to use 3rd party GPS programs such as TomTom or the GPS feature of Google Maps)
I'm not sure about faster, but the freed up RAM helps with speed. For the most part it's just about getting the most out of your phone.
There is a guide to flashing and I suggest you follow it if you feel that upgrading is something you want to do. Upgrading works for Bell, as I'm on it and it works for me.
You're right, there are a lot of choices, stick to DCD for now and when you get more familiar with the process you can get adventurous.
