Are you using an 8GB SD?

I have 500+ songs, 2 full length movies, documents, photos, and other program files on my card with 2GB still left.

MP3 files are already compressed at an approximate ratio of 11:1, so there's not much more you can do to them other than re-encoding them to a lower bitrate.

Exactly - Encode the mp3 to a lower bitrate; however, you will loose sound quality - I personally wouldn't do it. Get a bigger memory card to fit more music - that is what I really suggest

8GB Class 4 SDHC for $20 shipped on NewEgg. Kingston, not a no-name card.
