There is no German language WM6.1 ROM as they are all customs, you can have English language and the keymap in German.

Yeah they links to ROM same as Rose Remade.
A good place to start is How to flash your Dash as all the ROM links there will also be a good resource on what you want to do.

NRG Rose ROMs are ported from the s740 and is WM6.1 the Rose ROMs are newer than the Kavana & Ricky Remade.
Kavan was the first dash WM6.1 then Ricky Remade with alot of extras, it's worth taking a look @ all the ROMs and seeing what you like as the keymap can be changed in the ROM for German.
Click in my sig step by step how to flash Dash and link to all the ROMs is there including the guide on how to flash.
I stand off from saying what is the best? As it's down to personal taste & don't speak German.
