Creating custom ROM's

Hi all,

I apologise if this has been answered before, but I'd like to start creating custom ROM's.

Could anyone point me in the right direction? Where do I start? Do I dump the ROM from my phone with the software I have installed, etc.

Any help would be greatly appreciated.
