Not a complete newby, I've flashed the last 3 phones, went with the WM6.1 rom on the touch before it was official but I'm wondering with trying out the 6.5 beta - If I flash it, is it possible or reasonable to go back or will I pretty much need to wait for the official 6.5 rom to change?

You can easily reflash back to 6.1 after 6.5 with no issues.
