First thing I did was to have my phone SIM/CID unlocked (if your hermes isnt already) explained in this link http://forum.xda-developers.com/showthread.php?t=293665. This process is a very quick task but always follow the instruccions carefully and read the forums because sometimes you can render your device unusable if you do something else or there is an interruption during any flashing and is better to know as much as you can before running.
After that you are adviced to install HardSPL v7 in this link http://forum.xda-developers.com/showthread.php?t=296722. I should tell you that is safer to use the SD card method to avoid connection issues with cables, ActiveSync, Windows Vista etc. the SD card method is explained here http://forum.xda-developers.com/showthread.php?t=295735.
Then you can flash any cooked french ROM you want like this http://forum.xda-developers.com/showthread.php?t=461680 or http://forum.xda-developers.com/showthread.php?t=359458 only difference is that you dont need SSPL-HERM.EXE anymore. Just put the HERMIMG.NBH into the FAT32 freshly formatted card and do a hard reset to flash.
