Awesome! But I have a question. Can I update to it through KIES (I have a modded ROM and kernel) without risk? I'm ok with re-rooting flashing CF-Root through ODIN or similar...

I have the same question.
Do I have to flash an official rom through Odin to get the update from Samsung?

Yes you need to flash back to stock.
