Default Kernel and System apps

I have a sgs2 CF-rooted so far but I'm looking for a stable kernel which allows me to OC but that I still can use with the stock rom. which one you recommend?

and also, there is a bunch of crap when talking of system apps, which can be safely deleted? I read a thread on this topic but there were stated all the apps) so I don't think there will be anything left:P

For example, can I delete the stock browser? Will that affect the system? Thanks

I don't think you can delete Stock Browser. Why on earth would you wanna do that anyway!
There are a lot of kernels floating around. Chainfire, Ninphetamine, SpeedMod, Lulz, Hellcat's etc. Personally I liked the CF kernel as it was very close to Stock and yet it had root. However, I switched to Ninpho for BLN, but I'd like to move back to CF if I get that support, don't know why, I don't like this Ninpho kernel.

Thanks Mr JJE, but I already said I've had a look at these and they erase almost everything. so they are questioning.. but I'll have a second look, at your suggestion
any recommendation for kernel?
