What apps do you delete of the ones that come pre installed. Do you experience any problems after deleting them?

That's true. I haven't rooted or unlocked a phone since my GNex before the 4.1 update so I can't say in this case.

I wouldn't go deleting any pre-installed Google apps though. If that little bit of space is really gonna help you, you should reconsider the amount of stuff you store on your phone.

How much faster is the phone after doing this? Is it a noticeable difference?

You won't notice a difference in speed. You'll probably get better battery life

better battery life for sure... most of. the apps I deleted starts on boot and remain in cache at boot...
Google Chrome use 25:30% battery...

free ram increased.. I have 1.5gb on boot... boot is faster
but you won't notice any differences in terms of speed with a phone like this :)
but I don't want Google's bloat wares

I don't delete anything myself. If you stay with the stock rom you will not be able to flash OTA zip files in recovery if you delete apps in the system unless you first flash the system image with fastboot. Another option would be to put the number 1 at the end of any file name which would in effect make the system not see it. An example would be Chrome.apk1. Then to flash an OTA you could rename it back to the original. Another option would be to use Xposed Framework with the paid version of Greenify which would give you the ability to hibernate system apps. I usually see 1.4+ GB ram available right after boot.
