Would the combination of stock ROM + custom kernel work fine - without any bugs? And which one would be best? Not necessarily the best one but the most stable ones which work with stock ROM, and I'd just decide myself.

Also, if there's an Android update, will my kernel reset back to the stock - due to the update - or will the custom remain? Unless custom kernel causes some difficulties with stock ROM updates (which I doubt it does, but who knows).

Thanks in advance.

Yes they work fine since they're built from source. Try them all and find which is best for you. Just dont use cm kernels. Asking for "best" anything is against the rules

You cannot have official updates if you install custom things. See "ota-helpdesk" in general.
