It's really weird how only a handful of devices have been hacked like this. The last time I remember being able to change the boot logo was when I had SGS2 (GT-I9100)!

Because almost all the time, it has to do with the bootloader and touching it may be risky.

But why is it so much harder on some devices? Other Nexus devices are pretty open too, why N5 only has this?

Nexus 5 has a dedicated partition only for images of fastboot mode and bootlogo while for other phones these images stored in the bootloader and bootloaders have signature check.

Some bootloaders have signature checks. Some bootloaders are hard to modify. Some bootloaders are risky to modify. Etc.

Some bootloaders have the images in a separate partition, like the Nexus 5, which makes it relatively easy to modify them without the huge risk of damaging the bootloader.

I could always keep asking why, but I'm pretty satisfied with these answers
