Can the HTC One play mkv movies?

Or do you need to convert to other files like avi or mp4?

VLC seems to play every codec under the sun. I use it and works well for mkv and others

yes, some application in google play can do this. do not need to convert. but consider to the battery life , i do not suggest you watch video in htc one.

VLC all the way. The Android version is still in beta and not available everywhere via Play. Here's a link to the nightlies: http://nightlies.videolan.org/build/armv7-android/

Try a third-party video player or convert MKV to HTC One best video format MP4 with a video converter app like Brorsoft Video Converter.
