2 I had the same problem when I first unrooted. Go into stock recovery after flashing the official ROM and do a factory reset.
2 CF Root is a really easy way to root your phone. http://forum.xda-developers.com/showthread.php?t=1103399 Just follow the instructions to the letter.

2 I'd recommend rooting with the cf root method. It installs SU, Busybox and CWM recovery. In recovery you can make a nandroid back up. It's quick and easy. The links you posted came up with a 404 error.
1 I would advise against using Rom Manager.Ive tried to boot into recovery from there on 2 phones and it freezes,whether I dont use it properly or it wipes out my cwm install I dont know,but it did.Then I had a hell of a job flashing stock>rerooting...
