I'm fairly new to rooting and I want to be prepared for whatever is to happen.
Which part of the rooting process deletes all data: unlocking the bootloader or the rooting itself?

It is the flash bat file partly too. I would back it all up in one step before doing it and then root and unlock bootloader at the same time.
