Just saw update for 4.4.3 but haven't used sunshine yet so was wondering if I update if I'll still have the option to use it?
Will sunshine work with latest update?

Unless HTC patched our version. Other variants that have 4.4.3 from awhile ago can S-off with their version of this OTA.

Our versions are always different from the variants. That's why we're are usually last to get the unlock/s off most of the time.
