How is gWallet/tap to pay NFC? I don't think CM11 has it worked out yet...

That's what I assumed but wasn't sure. So basically if CM doesn't have it then no AOSP-ish Roms will?

Not necessarily. That all depends on what is being tracked, what has been merged, ect...
