Let's share our finds here. My list of "best for X on the Infinity":
a) I/O scheduler (after rooting): sio [through ATP Tweak, see my other post:

[b) CPU governor (default kernel so far): interactive (default)] <-- both managed by No-frills and ATP Tweak bundled
c) web browser: Dolphin Browser or Chrome (I like Chrome better, as it supports mobile dock shortcuts, but it doesn't support H/W acceleration on TF700); Edit: for those who need multitasking in non-tablet way, OverSkreen might be a cool add-on (I believe it uses the stock browser, but it allows you having a few windows on your desktop, still not so common on Android)
d) (fastest) PDF reader: RepliGo Reader (2nd place: iAnnotate PDF)
e) e-book reader: Cool Reader & Aldiko (stock MyLibrary is fine for epubs too)
f) Office Suite: Kingsoft Office (because it's free and very good) or OfficeSuite Pro (because it's even better / more intuitive)
g) notes: SuperNote "bundled" with TF700
h) ADBLOCK (after rooting): AdAway (!!!)
i) video player: BSPlayer FREE (2nd: VPlayer, 3rd: MX Player because of UI, but it doesn't play most of my big movie files well enough) + MyNet for network multimedia of course
j) file manager: Total Commander / File Manager HD (different UIs); WiFi File Explorer for remote management within your WiFi network
k) cloud storage: I'm used to Dropbox, although I intend to try box.net & ASUS cloud storage; not much luck with Google Drive though
l) press / news: Zinio & Press Reader seem fine; but I particularly like "BBC News" app
m)
dictionary / encyclopedia app: not sure, I would like something well integrated into my Android, so far I've only tried ColorDict, as it was RepliGo's first choice I believe

keyboard: yet to try bunch of different keyboards next weekend [tried and liked the GO keyboard, but I didn't play well with the dock...]
o) battery management: GSam Battery Monitor (+ 2nd: Dual Battery Widget)
p) system management in general: not sure yet, I've "clicked through" System Tuner, System Monitor Lite and Tablet CPU Usage Monitor, they seem OK, but nothing special
q) calendar: the stock app + Wizz calendar widget (transparent) + Touch Calendar sometimes
r) weather widget (& other widgets): HD Widgets [default Accuweather is OK, although it has some lame names for non-existing places]
s) music player: no preferences, I'm not using my tablet as mp3 player (Winamp perhaps?)
t) torrents: tTorrent Pro (but because of the I/O issues I won't be using torrents too often on my Infinity)
+ games
my win is Heroes Call THD, although be aware it tries to build its way through a clever micropayment system

a) My I/O scheduler is sio, after the ATP Tweak program's intervention
b) didn't intervene yet with the CPU scheduler settings
c) Opera Mobile, since I have severe issues with Dolphin's privacy policies (they scavenge pretty much everything you do or visit and send it up to their server without ever asking your consent to do so. There has been a thread on XDA on this, started about half a year ago or so. I wouldn't touch this one with a stick, no matter how fast it is. Opera does the trick for me, and furthermore functions correctly when doing mobile banking.
d) The fastest PDF reader indeed is RepliGo, whereas the best-rendering single-purpose PDF reader prize goes to EzPDF Reader. I find myself reading PDFs with:
e) my e-book reader, however: Montana. I really urge to try this one, as I like the customization, the bookshelf, and just like the overall feel of the program. Absolute recommendation!
f) I mainly use Kingsoft: pretty good and free. I have struggled with OfficeSuite, I believe, and several other programs as well, for not supporting Excel formuas I use often. (I mainly spreadsheet and don't do too much word-processing proper.)
g) Note-taking has been quiet lately, and I haven't even used SuperNote yet. Former note-taking app of choice was Moogly (on my SGS2).
h) Ad-blocking is with AdAway (open-source and effective)
i) Media player: DICE Player for video, mainly, because of the hardware-rendering engine. Have tried BS Player in the past and just didn't feel as nice. Might try it soon again to see whether it has significantly improved. (I hate the lack of an ergonomic library in Dice and most others, they all should look at vPlayer for a library that actually works. That is my player of chioce for my kids' videos, since it gets them in a nice list in which we can actually see what's where without having to browse the entire filesystem by hand.)
j) My file manager of choice is Total Commander, hands down. Free, effective, fast FTP access.
k) I'm not a very enthusiastic cloud user, because it makes me feel a bit unsafe. Dropbox is very charming, however, and is my single go-to cloud solution at the moment. Box is nice for its PDF rendering engine: if you upload a PDF and share the link, it can be viewed in a browser window without the viewing system having to have a PDF reader installed.
l) Press/news/rss: Demon RSS with not that much of feeds
m) Dictionary is currently not in use.
n) My current keyboard is pretty much exclusively the main hard keyboard with ASUS' standard keyboard (given that, I have just bought a slightly more fragile laptop, hahaha!), as SwiftKey has VERY good predictions on the SGS2 but literally is mute on the TF700. (I have ticketed their support people and apparently they're getting to work at it at first opportunity). If they succeed in getting it to work, SwiftKey will be my underlying keyboard and rediction tool of choice.
o) Battery management: standard ASUS widget, as Dual Battery Widget doesn't provide any digital indication of juice left (I've always hated the simple visual filled-or-not-filled indicators, starting with the standard indicators on Android). I want numbers. What I do like very much, however, is PowerTime, since it actually provides a running time left (which only is meaningful once the TF700 has exhausted the dock batery and runs from the main battery, granted).
p) System management: currently none.
q) My calendar is Work Calendar (saved me a LOT of work on managing my hospital shifts!) and Touch Calendar for the main overview of all items on my agenda. Previously used Business Calendar, but the font didn't scale that well on my SGS2 -- might try it on the TF700, however, since it has much more screen real-estate.
r) Weather widget is HD Widget's most elborate one, although I mainly use it for decoration (if I need to know the weather, I'll look out of the window, thank you. If I'm working and can't leave the department, what use is it to know the weather outside of the hospital, or at home (which is about 100 kilometers from work)?)
s) I do not use my TF700 as a music player, either, and neither did I use the SGS2 in that role to any significant extent. Winamp indeed is pretty good. I do use SqueezeCommander for controlling my Logitech Squeezebox at home.
t) I normally do not use torrents due to them having been excrutiatingly slow in the past; I usenet instead (push NZBs to my Synology NAS running SABnzbd using Total Commander and watch folders, and control the latter with SABcontrol). I have recently been pointed to aTorrent and it functions commendably, and I didn't experience anything out of the order -- I do not think the I/O scheduler would be overwhelmed by the relatively small amounts of interspersed data torrents generate.
u) I'm not that much of a social media guy, I guess, as I do have a FB account but hardly ever log in. Same with LinkedIn, Hyves, Twitter or whatever crap they come up with. I do not like the privacy intrusion, I do not like the spying eyes, and I do not like the distractions. Only app I use in the sense of communication is Whatsapp (which a lot of friends and even some family members use) or Google Talk for the technologically impaired with a tabet. (I have transplanted Whatsapp from my SGS2 and TB-froze it on the phone -- I now get my messages on my TF700 and reply to them using the hard keyboard.)
v) My launcher of choice is Apex Launcher Pro, as has been the case on the SGS2. It has a nice folder implementation. I previously preferred Go Launcher, but it went down a "ergonomics deisgn hill" I didn't like (icons rendered strangely, text labels being cut of at higher icon counts on the screen, etc.) The HD version does sport a nice icon and widget addition interface, though.
MISC: One app I can really recommend on the TF700 is Rotate, since it provides full control over app orientation, even overriding internal app designs. It is what makes RealCalc (another recommendation) run in a useful landscape-mode interface (otherwise, I'd always have to tilt my head sideways when making some calculations).
Just a list without going into much more detail: Alarm Master (handy with shift work, as it provides a list of alarms you can turn on and off as needed), Buienalarm (gives time-accurate advance warnings of rain torrents
), FilePush (for pushing single files to the Tf700 or SGS2 over home WiFi), mSecure (for managing passwords), GTasks(for managing my blurbs and mind-farts), Spool and Pocket for managing offline website reads, QuickPic (great lay-out, intuitive gallery app with great speed --
easy recommendation), ProCapture (photography app), Folders.nl and Reclamefolders (only for you Dutchies in here!) for providing commercial flyer access either on-the-go ar at home (the flyers in the mail now often go straight into the recycling bin), and Sygic GPS for if navigation would be desired (but we have dedicated Garmin Zumo 600 for both automobile and motorcycle use, so I do not navigate by Android that much
). Oh, nearly forgot TubeMate for YouTube video downloading (for both my kids' video needs and my own), and a slew of Battlefield 3 and Diablo 3-related apps (yes, somewhere inbetween all these time-consumers, I am, or at least pretend to (still) be, an avid PC gamer.
