The launcher is not the same because is not what you have in the rom
Since you're a beginner, u'll have many questions that everyone is tired to answer and i recommand to read and learn before u flash this
Dude, don't install it because u will damage your device.
It's obviously u don't have a clue what is cyanogen and how to use it. Find out what is, how to install it, what bugs he has and when u are ready flash it. Untill then don't visit Galaxy Ace S5830 Android Development ANYMORE

Dude read first, you don't even know the basics of flashing and you want to flash a CM nightly, you'll kill your phone with that.
Read the guide P4qui7o has given link for and then think about attempting this.
Since its your first time, you'll need a lot to prepare for in case things go wrong, You need to have a nandroid bakup, Odin and a fresh firmware ready with you.
Also make sure you know where the nearest Samsung service center is

I know it is confusing. But you will get all the info in stickies section of Android developement. Read it and all your question and more will be answered.
