Whats the difference in our builds of cm10.1 and cm11? Is stability, speed, etc better or?

Not really the answer you are looking for - But the BIG difference is that cm11 is based on Android 4.4 while cm10.1 is based on Android 4.2. There is no more development going on in 10.1.

I have not been running cm11 on the DHD long enough to give you a better answer, sorry
