Cyanogen Rom are pretty much basic Android but if it's too bare for you
you can use any custom Rom and open his zip file in winrar or 7zip and delete any app you don't need from /system/app directory.

to disable unneeded apps is the last option @freedom74: can you tell me more detailed what you mean with "open custom rom with Winrar" ?
When i open the .ftf File there are only files and no folders....
Well, when you said custom Rom I presumed you have unlocked bootloader and you installed ROMs from recovery.
So you take zip file from custom ROM opens it in winrar and delete unnecessary apps from /system/app and exit winrar.
Then you copy that file to SD card and install it from recovery.
