Alt1 easiest.
Re-flash whatever room you are on from recovery menu (no wipe needed, so shouldn't lose any thing).

Alt2 harder/more work/Not sure if it works.
Push back the original launcher with adb if you have debug over usb active on the phone and manage to reach it after boot.

In that case reflash with smartflash.

Alt 2 is almost dead because:
I cant find were to push it since I'm not on stock.
Would need some one to check all the files and maybe do a back up of all of it. Maybe if some one do a backup with titanium It might be possible to push it with adb. But I have never tried it my self so not sure.

Entering recovery should not depend on the launcher.
Anyway next time try to switch your active launcher *before* deleting the active one.

And btw since the launcher is the main interface to the phone, it does not make that much sense to delete the stock one.
As anything could happen to the other, you *should* have a backup plan to fall to.
For example every time my GO Launcher updates, the phone reverts to stock LG launcher.
What would I do shouldn't I have it anymore?

Boot direct into recovery rather than using an app got get there. Assuming you actually have a custom recovery? If not, do this: http://forum.xda-developers.com/show....php?t=1229407

What happens when you try and boot to recovery? And did the APX driver install OK?

You have to keep both power and vol- held, you're just holding vol-
