Your just going to have to experiment . Best advice I can give you is to not go below 245mHz min. You can start Max at 1.2gHz. Either with the dodge kernel, or x99's kerenl. As for what your max should be for day in, and day out. That depends on many variables. Battery life I suppose would be most important I would assume. But again your going to have to experiment.
