There is still hope but unfortunately you will lose all data and have to redo all your apps.
To be on the safe side reboot into recovery., and making sure you sill have the update and gapps on your sdcard. Go into mounts and format boot and cache.. Then mount data and format data.. Then mount system and format system. After complete install update 1.1 along with gapps I believe the latest is 8.1. Then do another data wipe factory reset and reboot system. Now I should of started out by telling you that the tablet must be fully charged before booting into recovery. I don't know if that makes a difference but it could help things run more smooth because you will have to let it set up all over again for 30 minutes. I just did mine at night that way it could sit on my desk until morning. I slept while it worked LOL.
I found it!
With a friend who's more versed in Linux shell commands than I, we got into the terminal and first tried just 'top', couldn't view the first process, did a su, then found the 'top -m 10' to show just the 10 highest processes.
I had installed the phandroid app, and it was pegging CPU usage at 95-98%.
Killed it, then uninstalled, and everything is great, buttery smooth like before.
So... it was a bad app, a bit strange, but it's fixed now. Thanks for your help regardless!
