These are the defaults with XXKL2:
dalvik.vm.heapstartsize=5m
dalvik.vm.heapgrowthlimit=64m
dalvik.vm.heapsize=288m

You should probably leave heapsize at the default of 288m. I think that's a maximum amount, most apps won't use anywhere near that.

Just a quicker. I've installed CWM and have done a backup. If i get into a bootloop, can i then just restore the backup?

Thanks button has been hit!

Yup, I'd assume so, barring an actual hardware problem. Nandroid is reportedly very good - I haven't needed it yet, plus there's always ODIN to fall back on. (I was so spoiled on the Nook Color - I booted the entire OS, CM7, off of a removable microSD card and kept B&N's stock intact on the internal storage.)

Does anyone have lag with the default launcher?

Going in and out of the app menu, I've turned animations to "some animations" and still lag with it. Go Launcher is OK, but is resource intensive.

What is the best way to keep RAM free, I've got RAM Manager Pro, but doesn't seem to have much effect?

That app launcher delay with TwLauncher is an intentional effect. I don't mind it and like TwLauncher's fast page switching. If you want to use something else, try ADWLauncher EX. It's very configurable and fast on my Rezound.

If you've removed Samsung's unnecessary stuff you shouldn't worry about RAM use IMO. SystemPanel is nice if you want to have an 'End All' task manager that lets you exclude selected apps & services. But doing that often will create more lag because Android uses extra RAM to precache apps you might use.

Sleep of Death. The device's screen turns off after being idle and won't turn back on without long-pressing the power button to reboot. Sometimes you can still ssh or adb in.
