You can choose the maximum space in both the solutions. You just have to partition sdcard choosing the size ( it can be less than512 mb or 1gb or even 2gb if you use cmw options, the easier ones. ) The difference is just that the data2sd script moves all the data folder ( where apps are stored ) to SD, and link2sd moves ( it says" bind", but it actually move them entirely to SD ) just the apps that you choose. Also, link2sd should be easier to set up and works also on not CyanogenMod roms. If you are not so skilled (like me) and you don't want to risk applying new scripts (like me), link2sd is a good solution. The only "problem" is that after installing each app you have to move it manually.
