Figured it out, for some reason CWMR 5.8.1.5 wasn't clearing the Dalvik properly. I installed the non-touch version, wiped Dalvik and proceeded to install. Now it works. It was all CWMRT this whole time.
Now, time to try other one. See which ones I feel comfortable with.

That's fantastic news! I've never had problems with CWR Touch, but now that you mention that I will be switching back to regular CWR.
My phone is working 100% now with ThrillSeeker 2.1. I'm so loving this. I had a brief lapse in cognitive thinking. I went for a ride with my girl and was playing with the browser. Outside of my WiFi connection it said no connection. I was like DAMMIT!. I went to go screw with the APN settings... Mobile Data was unchecked. Talk about a deedeedee moment. :P
The camera issue is fixed. Feels so good to be able to finally take pics of my bubbies again.
Everything is working better then before. The battery was at 100% when I took it off charge over 2 hours ago. After heavy usage of adding my apps back, it is now at 96%.
Again, thank you all for helping me resolve this issue.
I wish I knew more about programming, I'd dev up for this phone. It's well worth it. I'm only good at GUI's unfortunately. :/
Not entirely sure how to flash a new kernel to a ROM. I've only ever flashed complete ROMS.
I know, it's a sad thing.
Typically it's just a ZIP file with the kernel files ready to be flashed, a partial nandroid backup if you will, replacing the boot with speedup tweaks and the overclocked kernel. Make sure you do a quick backup of the phone to SD in case the kernel doesn't like you. I've had that happen, and I'll tell you, you don't do constant backups, and you're gonna have a bad day.
UPDATE: GetRIL updated on my phone to 0.9.3, and now it FCs when I try to apply a new RIL. I have Root Uninstaller (recommend this handy CYA tool), and it conveniently auto-backups apps as they're replaced. So I just restored 0.9 which was last and worked fine, and viola, back in business.

Thanks. Yeah, whenever I download a ZIP file on my phone it asks me if I want to extract it or use ROM Manager to extract it. So I always manually put anything on my phone via USB.
