It contains MULTI-CSC, so you will find your language in the setup and you will not have any issues with your market apps.
Just follow the flash instructions for installing the P5110 ROM.

So i download the link in first post (p5110 stock rom) then i install with odin...after i select the italian language and all the apps like polaris office,music hub ecc. Are included in it????
Or what is OP e where i can find it?

i've the same problem for my p5100, i need the stock csc p5100itvale2 to restore the original setup of my tablet.
In the stock rom presented in the original post is not available the ITV version of the CSC (italy)

I think the only option you got is to download a firmware with MULTI-CSC.
At the moment there isn't any Italian firmware for your device.

No, but when you need to return to stock in most cases, probably all of the cases, you're coming from a custom rom.
