As far as I know you cannot change the language in WM6 with the existing Italian stock ROM. You have to go the hard way and flash a custom ROM at your choice, most of the custom ROM on this Forum are in English.

For flashing a new ROM you have first to HardSPL the system, then to download the CustomRUU (custom ROM Update Utility), install the new radio ROM (if necessary to replace the old one) and then install the custom ROM at your choice. Unfortunately you'll have to read the forum for the proper topics and links.
