1) Use some file manager capable of root like ES File Explorer - if you use ES, go to the settings and check the boxes to make it use root and to remount system partition.
2) go to /system with the file manager. open the build.prop as text and choose ES editor to edit it
3) Find the line that says lcd.density = XXXX and change XXXX to whatever you want
Another alternative is to install dpi changer or LCD density modder from play store. I never used those but I heard they work fine. Have a backup of your stuff just in case they fail.

You can restore some apps. You don't want to restore system apps. Also most google apps like gmail changed in jelly bean, so you don't restore those, reinstall from play store.
Keep in mind that some apps are still incompatible with jellybean so even restoring they won't work. Some guy reported that restoring Temple Run game save data didn't work for him. If you restore an app and it doesn't work try removing it and installing fresh from play store. If titanium backup freezes while restoring some app, it's probably not compatible so you'll have to reboot the device and reinstall it.
