Nandroid and try it, what's to lose? FWIW, I've never had a problem with TiB, just use it properly. Recommended gapps are linked from the Carbon page.

I asked this because I saw that for CM roms TB is not recommended so I was wondering if it's the same for CarbonRom.
Where could we find the recommended gapps? I made some research on the main page and extras page but nothing found about a Gapps link...

First question already answered by one of the devs. Try it and see.

Second question, it's clearly linked. http://goo.im/devs/carbon/n7100

Anyone tried a different kernel with successful with version 1.3? Which one gives better performance? I find the stock one with 1.3 more laggy then I'd like.
