I just updated to 4.3 and now when I reboot or power on my phone the first screen as it boots shows the samsung galaxy s3 logo and at the bottom it shows an unlocked lock and the words custom. What does that mean? I was previously unlocked and rooted.

That's a 'no no' indicator if you ever take your phone into Verizon for a warranty repair. It doesn't affect the function of the device at all, but the Samsung phones keep a tally of the bootloader and custom rom flash count.

If you use an app like TriangleAway (http://forum.xda-developers.com/show....php?t=1494114), you can remove the flash count, which should remove both from your boot screen.
