Default [Q] Stop apps updating (without root)

I don't want the "Facebook messenger" app to accidentally be updated when I manually update other apps, as I love the SMS chat heads - is there a way to hide it from the update list so I can press "update all" without worrying?

Unless there's a cheeky app for it, manual updates are the way you have to go.

I'm pretty sure It's not possible in the play store. You could try a play store alternative like aptoide. Aptoide let's you ignore updates and remove them from the list, then you can just hit update all without worrying about apps you don't want to update.
