I have already re-locked and flashed the 3.0.5 RUU and everything is completely stock except the bootloader reading S-Off and Relocked.

I'm looking to reset the bootloader to read S-On and Locked just as it would be right out of the box.

Hmmm. I don't suggest getting s-on, it's pretty risky. You better flash this hexedited hboot http://forum.xda-developers.com/show....php?t=2314921
It basically masks the s-off as s-on. No one will ever notice it, it's basically risk-free and you remain s-off

This needs to be done while I still have root access right? Because I have already relocked and ran the latest 3.0.5 RUU.

I'd rather not unlock and root again if I don't have too.

No need for root it's flashed from RUU mode
I would advise using RootLinix hboot instead it will read hboot 1.55
