So..

Once you root...what processes do you look at stopping/removing to speed up your phone and save battery life?

I usually remove all samsung/at&t/google apps (except for playstore)

Actually theres a nice littler debloater script I used when I first rooted my stock firmware that our friend @Walter.White provided us

How much performance and battery life did you notice after you removed the bloat ware?

I remove all Samsung services. I don't use them anyways. Also lookup Greenify, noce little app helps on the battery, a lot! My setup is better battery stats to monitor any wakelocks, greenify to hibernaye apps that keep running in the background and now I'm testing Snapdragon Battery Guru, which is like a Juice Defender kind of thing. But designed for Snapdragon devices, so they say.
