No, you cannot downgrade without tripping knox as far as I know.

Not rooted mine yet, but only had it a couple of days. I'll give it a week or 2 so any manufacturing faults show up, then after that if anything goes wrong mine may "accidentally" go for a swim too.

Everyones insurance is different mate. My insurance covers all my electronic devices for accidental damage and loss. You would need to check your policy.
