I will use it in the evening and then won't touch it for a day. Then I go to pick it up and its off. I can turn it back on by pressing the power button a dozen times, it never boots up after I press it once, the thing vibrates but won't turn on. Its not the battery, because it'll turn on and still have charge.

Its getting really frustrating because I don't know what's going on. I'm stock on 4.4.2 not rooted, but unlocked. Any new apps I installed, have been removed. How can I figure out what my issue is.

If it is easily replicable than the first step would be get a logcat and last_kmsg of the event

So I installed a logcat app (aLogcat) and it crashed this morning. How do I make sense of all the info on there? How do I know that this is the info to help determine my issues?

That's not what you are looking for, I mean yes that's part of your log but you need to run the log while its happening or last_kmsg right after it happens, or really both to help narrow down for sure.
Get adb up and running and use this to capture both. If it crashes try to see if adb is functioning while in this state, if so capture the log and post it here

I really wish I knew what you're telling me. And that link provided earlier didn't help me much either, way too much info on there for me to try and decipher it. I'll tray and Google at some point to try and figure it out. I'm pretty dumb when it comes to these things.

But, how do I run the log while its happening? The thing is shutting off in the middle of the night, and I don't even know when it happens. Keep the app open until it happens?

The link I sent you also had other links in it that showed how to use adb. I would use adb over an app for your situation
