How can I manipulate the boot time of my Z1 (decrease and increase)?

Don't use unnecessary apps.
That's everything you can do on stock kernel and ROM.

Also, use stock laucher and don't use many widgets (that's already when system is ON but could be annoying as well)

I'm using doomkernel v21 and stock kk .757 deodexed. There is not any another way to change it ????

There are xposed modules which allow you to change which apps "start" at boot. You may want to look into boot managers for rooted devices

Tweak kernel, do that what Greg just said and delete all unnecessary apps...

If you are rooted and you are - you can do many things.

You can go to system/app and system/priv-app and delete all apps you don't need.

BTW - even we need deodexed ROMs to be able to use many mods - odexed ROM are faster.
That's whole or the main purpose of dex files and dalvik cache

Apps are using their dex brothers to access assets easier and quicker...
