This might have a simple answer to a simple question, but I just want to be sure so as not to have to go about unlocking it again

Okay, so I have a GT-i9000 with which I flashed Cyanogenmod 11. Now I only SIM-unlocked it AFTER I flashed the custom rom, and it works. I can make calls and text other people. Now, if I decide to flash ANOTHER rom, should I do so? Will it "re-lock" or remove the unlock from my phone? I've read other posts that say that you should unlock the SIM with a stock rom, but that's not the case here. I flashed CM11 before the unlock..So should I just leave it or can I flash a new custom rom without the phone being re-locked.

- I understand that SIM unlocking is more of hardware programming than software, but why then should the ROM (whether stock or custom) matter?

Thank you!

It shouldn't make any difference.
One time SIM unlocked = unlocked for good.
