Hey, this thread will help you, for getting started with your Android projects,and will cover all its basics(decompile, recompile, sign using apktool) and hopefully your doubts

Copy styles.xml from any app.
Remove all contents within
<resources>...</resources>
And add your required style codes.

Best of all and hope it works for you.
But I would prefer changing theme of the particular app for which you want to have Holo.DeviceDefault.Dark theme.

Cuz few apps use device default themes and then add few additions to it according to the theme used.

So if you change light to dark in framework then all apps will have dark theme and this may break ui of few apps.

After i put my assets in the asset folder in project, should i recompile the whole project folder or what?

If you have moved the zips to asset folder and you are ready to try the theme then use eclipse to test the app.
You can't recompile a project simply as you have not decompiled an apk but made a new app project in eclipse and you need eclipse to build an apk of that app.

For testing follow :
Select and right click on App Project in Eclipse
Select Run As > Android App.
Keep your Sony Xperia Device connected to pc and then choose it from the new popup.

For Building an Apk
Select and right click on App Project in Eclipse
Select Android tools > Export signed app
Follow on screen instruction
At the end you will get signed apk which you can share with others.
