Do I have to flash NCG back to install SafeStrap or can I do it directly from NI2?

You can install Safestrap from NI2 as long as you already have root access and Busybox installed... however if you don't have that, you will need to Odin back to NCG in order to achieve root and install Busybox. If you already have a working Busybox, you don't need to flash back, just install.

Yes...I am not knowledgeable with kernel stuff, but I believe safestrap allows the kernel to boot, then hijacks the boot process allowing a custom recovery to be side loaded off the ext. Sd. That is why you can not run custom kernels with safestrap.

Hello guys.

First of all, thank you for this tool. Highly appreciated.

Next, (if its not the right section, please excuse me, and if needed, i will remove the post) how can we develop roms for Safestrap. I looked on Xda and other forums and i was not able to find anything unfortunately. Maybe i did not look enough.

There is nothing special needed except the stock kernel must be used with safestrap. So basically you are limited to TouchWiz roms only.

Like droidstyle said, nothing different than "regular" ROM development. You don't even need to include the kernel because safestrap doesn't even flash it. So just system and data (if wanted) is needed in the ROM zip.
