OK, so I just bought a Verizon S5 online stock android 4.4.4 on the NK2 baseband version which I can't root. I was advised to downgrade to NCG, I already downloaded Odin & the NCG software. I don't wanna brick my phone. Do I just follow the above directions?

That is what the directions are for. Follow them and you should be good.
