So, I finally decided to take the plunge and convert to F2FS.. I was converting my existing ROM. Everything seemed to work nicely, I converted Data and Cache as well. When I got through the "Android is upgrading..." dialogue it seemed to get stuck on "Starting apps..." with the spinner.. I was right about to pull my battery and retry, then it completed and finished the boot fine. I just needed to be more patient.. The next time I went to clean flash a new ROM, I followed the steps to convert to F2FS then let it boot. Post boot, I jumped straight into KTweaker to see if it worked but it said "ext4" for system, data and cache.. This confused me because in KT-TWRP it showed the partitions as F2FS!! What I realized was that I hadn't enabled Root in Developer Options..

So, it was just a case of KTweaker not having access to check.
I'm sure that some of the people (that I've noticed here) who have had issues with F2FS may be running into these situations.
